Simple checks for tomatoes, greens, roots and herbs — the same cues our buyers use in the mandi.
Fresh vegetables tell you the truth if you look closely. You do not need a lab — you need the habits of someone who shops the mandi every morning.
Ripe tomatoes should smell like tomatoes and give slightly under the thumb, without wet bruises. Onions should feel heavy and dry, with tight skins and no sprouting.
Palak and methi should stand up, not collapse. Stems snap; they do not bend like a wet rope. Dhaniya and podina should be fragrant as soon as you lift the bunch.
Potatoes should be firm, without green patches. Cucumbers and carrots should feel crisp, not rubbery. If a vegetable looks tired in the crate, it will not recover in your fridge.
